  • 1 pack of baking powder
  • 5 eggs
  • 2 tbsp vinegar
  • 1 pinch of salt

Preparation:

  1. Mix all dry ingredients first
  2. Add the eggs, vinegar, and cream cheese
  3. Mix well until a sticky mass forms
  4. Preheat oven to 180°
  5. Form bread or rolls (we used muffin tins in the video)
  6. Bake the bread for approx. 40 – 60 minutes in a fan oven. Depending on size.

Ingredients:

Directions:

  1. First, beat the egg whites until stiff.
  2. Mix the cream cheese with the egg yolk and the baking powder.
  3. Fold into the beaten egg whites and mix lightly again.
  4. You can make the ketogenic cloud bread either sweet or salty by seasoning it with salt & pepper or sweetening it with Stevia Liquid, then it will be more like brioche.
  5. Form equal portions and bake the ketogenic rolls at 150° for about 20-30 minutes. At the end, put some baking paper on top so that they don’t get too dark on top.

Ketogenic bread with sunflower seeds

Ingredients:

  • 4 eggs (L), separated (yolk/egg white)
  • 2 egg whites (L)
  • 2 tbsp toasted sesame oil
  • 2 tbsp ghee, melted
  • ½ cup lukewarm water (120 ml)

Note: You will need 4 egg yolks and 6 egg whites total

  • ⅔ cup psyllium husk powder (80 g)
  • ¼ cup ground flax seeds (40 g)
  • 1 teaspoon Baking powder
  • 1 tbsp cumin
  • 1 tsp salt
  • 2 tsp cream of tartar baking powder or 2 tsp lemon juice or 2 tsp apple cider vinegar
  • ½ cup sunflower seeds (70 g)

Preparation:

  1. Preheat your oven to 180°C.
  2. Line a loaf pan with baking paper.
  3. Separate the yolks from the whites.
  4. Place 6 egg whites in a bowl. Beat the egg whites and gradually add the cream of tartar until you get fluffy egg whites.
  5. Mix the egg yolks (4 in total) with the sesame oil and the melted ghee or butter.
  6. Pour the water into the egg yolk mixture and mix everything into a homogeneous mass.
  7. In a separate bowl, mix together the ground flax seeds, psyllium husk powder, baking powder, cumin and salt.
  8. Add the egg yolk mixture to the bowl with the dry ingredients and process with an electric mixer.
  9. Gently add the egg whites little by little.
  10. Finally, sprinkle the sunflower seeds into the dough.
  11. Fill the dough for the ketogenic bread into the cheese pan lined with baking paper. Place it in the oven for about 1 hour.
  12. Remove the baking paper and let the bread cool for 15-20 minutes.

Keep the ketogenic bread at room temperature covered with a kitchen towel and it will last for up to 3 days.

Ingredients:

  • 120g flaxseed flour
  • 30g psyllium husk powder
  • 30g coconut flour
  • 2 egg whites (M)
  • 1/2 packet of baking powder
  • 1 tsp salt
  • 1 teaspoon rosemary (dried)
  • 250ml hot water
  • 40g walnuts (chopped)
  • 50g black or green olives (cut into small rings)
  • 40g Parmesan

Preparation:

  1. Preheat the oven to 170°C.
  2. Put the flaxseed flour, coconut flour, psyllium husk powder, and baking powder in a bowl and mix the ingredients.
  3. Pour 250ml hot water into the flour mixture.
  4. Stir in the egg whites.
  5. Fold the olives, walnuts, and parmesan into the dough and let it rest for 10 minutes.
  6. Form a baguette from the ketogenic olive bread dough and place it on a baking sheet lined with baking paper. You can also use a stand for baguettes.
  7. For the typical baguette look, we sprinkled it with a little almond flour.
  8. The baguette goes into the oven for about 1 hour 20 minutes.

Sour cream – chive ketogenic rolls

Ingredients:

  • 420g almond flour
  • 4 tsp baking powder
  • 1 teaspoon Baking powder
  • 2 tsp xanthan gum
  • 1/2 tsp sea salt
  • 170g unsalted butter, cold
  • 1 egg
  • 120g sour cream
  • 1 tbsp cold water
  • 15 g fresh chives, chopped
  • 170g feta cheese, small cubes
  • 1 beaten egg for the glaze
  • Paprika powder

Preparation:

  1. Mix the almond flour, baking powder, xanthan gum, salt, and cold butter well with an electric mixer.
  2. In a bowl, add the egg, sour cream, water, chives, and feta cheese and mix until you get a soft dough.
  3. Sprinkle your worktop with almond flour and use your hands to knead the flour-butter mixture with the sour cream mixture into a homogeneous dough.
  4. Form a square out of the ketogenic bread dough and cut small squares out of it with a knife.
  5. Place the small squares of bread on a baking tray and brush them with the beaten egg and sprinkle some paprika powder over them.
  6. Bake the small ketogenic sour cream breads in the oven at 190°C for 10-15 minutes until they are golden brown.

Flaxseed crispbread for a ketogenic diet

Ingredients for ketogenic crispbread:

  • 1 tbsp (about 15g) chia seeds
  • 3 tbsp (about 30g) whole flax seeds
  • 6 tbsp (about 60g) ground linseed
  • 1 tbsp grain mixture (e.g. sunflower seeds, pumpkin seeds…)
  • 1 pinch of salt
  • Water

Preparation:

  1. Preheat the oven to 180°C.
  2. Mix all the ingredients, except the water, together in a bowl.
  3. Cover the seeds and grain mixture lightly with water and let the mixture bathe in the water for about 15 minutes.
  4. Stir everything thoroughly with a spoon.
  5. The seeds must remain in the water for another 10 minutes.
  6. Spread the mixture very thinly on a baking tray lined with baking paper and place it in the oven for 50-60 minutes.
  7. Allow the crispbread to cool thoroughly.
  8. Break the keto bread into pieces.

Ingredients:

  • 200g ground almonds
  • 10g baking powder
  • 120g coconut oil
  • 6 eggs
  • 2/3 cups mineral water
  • 12 g chia seeds
  • a pinch of salt
  • Xucker, Flav Drops, or Stevia if you want it sweet
  • Cinnamon

Preparation :

  1. Mix everything in the blender, fill into muffin tins (we use these muffin tins , nothing sticks)
  2. and bake at 180° for 15 minutes
  3. Optionally sprinkle with coconut flakes

Ketogenic bread with zucchini

Ingredients:

  • 1 cup (1 small to medium) zucchini, finely grated
  • 4 eggs
  • 2-3 tablespoons Walden Farms maple syrup
  • 1 ripe banana, mashed
  • 1 tbsp coconut oil
  • 1/2 cup coconut flour
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp apple cider vinegar
  • 1/2 cup walnuts (Optional)

Preparation:

  1. The oven must be preheated to 170°C for the ketogenic zucchini bread.
  2. Grease a loaf pan with coconut oil or line it with baking paper.
  3. Grate the zucchini very finely and place the graters in a cloth kitchen towel. Gently squeeze the liquid out of the zucchini rasps.
  4. Mix the egg, maple syrup, oil, and banana in a large bowl.
  5. In another bowl, add the coconut flour, baking powder, salt, cinnamon, and nutmeg and stir everything together.
  6. The zucchini rasps are slowly folded in.
  7. Mix the zucchini flour mixture with the banana syrup mixture.
  8. Finally, add the apple cider vinegar and stir everything into a smooth dough.
  9. Sprinkle the chopped walnuts into the dough.
  10. Put the dough for our ketogenic bread in the loaf pan and let it bake in the oven for 40-50 minutes.
